Henry de Querville AOC Calvados
Calvados is cider brandy produced in Normandy ideally suited to the growth of apples. The apples used are not your usual cider apples, but are much smaller and with greater intensity of flavour. They are picked, stored and then pulped in a crusher.
The cider is made in the cooler months of the year and fermented in large oak casks to a very dry style. Calvados must be matured for at least two years, and new casks are often used initially, with the spirit then being transferred into older barrels.
Henry de Querville: this producer is renowned for the quality of their brandy. Here a combination of pear and apple is used to create a fresh and light spirit.
Fresh ripe apple aromas along with a hint of oak on the nose lead on to a slightly sweet but clean finish.
