Château Simon produces its wines Appellation Barsac-Sauternes, Graves & Bordeaux. From 1814, there have been 5 generations, at Château DUFOUR Simon.
This property, which has expanded over the decades to reach today an area of 17 hectares, has succeeded in combining modern technology and tradition.
For production Barsac-Sauternes, the harvest, carefully picked three or four tries after the development of noble rot, is monitored very carefully in a modern winery during fermentation. Aging is done in oak-stave barrels for two years.
