Like many other dishes the best wine for a risotto depends on the actual flavourings, as opposed to the risotto rice itself. If the risotto is full of fresh vegetables, a crisper and lighter wine would be a good pairing.
For seafood based risottos, more complex white wines can be introduced to balance the flavours of the fish or shellfish. Richer and heavier risottos, such as creamy mushroom or chicken, may benefit from an oaked Chardonnay or even a light red to help balance the flavours.
