Jean-Paul Balland has created something really special when it comes to this red wine from the region of Sancerre. This wine is made exclusively of Pinot Noir and is cultivated on 2.15 hectares of chalky clay soils.
The grapes are put in stainless still vats for maceration for about twenty days.Two thirds of the harvest have then been aged in new oak casks before they are bottled for 12 months before being released. The final result is a fine concentration of black fruits with rich aromas of stewed fruits, cinnamon, vanilla, toffee and cedar.
