Sauvignon Blanc

Sauvignon blanc is at its best-defined in the central vineyards of the Loire, where it produces characteristically aromatic dry wines, like the legendary Sancerre & Pouilly-Fumé.  In Bordeaux, the dry wines have a dusty quality, although with earlier picking and improved vinification techniques this is now changing.  The variery is grown throughout California, Italy, eastern Europe, Australia, New Zealand, South America and is also used in Sauternes and Barsac blends.  Sauvignon Blanc wines have noticeable acidity and a grassy, herbaceous aroma and flavour.  They should be crisp, and are generally best when drunk young.
