Chardonnay
The greatest dry white wine grape in the world, despite its proliferation in virtually every commercial wine-making area. Once erroneously thought to be a member of the Pinot family, this classic variety is responsible for producing the greatest white Burgundies and is one of the three major grape types uesed in the production of Champagne.
There are a lot of misconceptions about Chardonnay and the wine it makes. Many people associate a heavy oak taste with the grape variety. Oak is a very common 'container' for fermenting Chardonnay, and so people have come to think that Chardonnay grapes have flavours of vanilla, butter, toast – this is the oak. The chardonnay grapes more usual flavours are tropical fruits like pineapple, and mineral flavours like limestone.
It takes great skill to oak-age a white wine and even more skill to ballance it just right in great Chardonnay wines. Chardonnays are also being made more often in stainless steel fermenting tanks, which is a good alternative to those who don’t want a rich, oaky wine.
Food-wise; its perfect with salads, seafood, light chicken and pasta dishes as well as soft, creamy cheeses such as brie.
